Sweet & Savory Fall Fig Salad
The other day I was perusing Instagram looking at all the things people are cooking: desserts, salads, fish, lots of pavlovas, and a plethora of fruits and vegetables. One that caught my attention was this beautiful salad by one of my a café in Copenhagen, Atelier September.
I love a sweet and savory salad that incorporates fruit. This one with figs is perfect for fall and so easy to create.
Recipe: The Everything Summer Salad
Serves 4-6
You’ll need:
For the salad:
– 1 radicchio
– ¼ cup of pickled beets, sliced (or 2-3 small beets, soak them for 20-30 min in a quick pickle mix of water, vinegar, sugar, and salt)
– ½ cup raspberries, sliced in half
– ¼ fresh figs, cut in quarters
– ½ cup watermelon, cut in small cubes
– 1 red jalapeno, thinly sliced
– Edible flowers to garnish (I used borage)
For the dressing:
– ½ cup mayo
– 1 tbsp honey
– 1 tsp freshly cracked pepper
– 1 tsp sea salt
– 1 lime, zest + juice
– 2 tbsp extra virgin olive oil
Instructions:
1. Place all the salad ingredients in a bowl, making sure to layer them so they look their best
2. In a small bowl combine all of the dressing ingredients, taste for seasoning. The dressing should be slightly sweet and with nice acidity to coat the salad, adjust if needed.
To serve, place the salad on a plate, drizzle generously with the dressing and you’re good to go!
