Ditch the PSL for a Fall Pimm's Cup
The best way to celebrate fall is by eating the bounty of amazing things happening right now: apples galore, pears in all the colors, plums, grapes—yum! It’s all about rich colors, deep dark purples and golden sunsets. I mean, it’s no wonder why this season is one of the hottest things on Instagram!
For this recipe, I’m packing all of these wonderful things into a glass, with a nod to summer (until next year, pal!) with a seasonal take on a classic London Pimm’s cup. Even if you wanted to make this alcohol-free it would work, since it has tons of flavor and a nice sour bite from the shrub part of the drink.
You can use whatever in-season fruit is available at your local market. I suggest avoiding any non-seasonal things like strawberries since, right now, they won’t be at the peak of their flavor. Even just different kinds of apples work!
Fall Pimm’s Shrub
You’ll need the following to make one cocktail:
– ½ cup Pimm’s
– 1 tsp apple cider vinegar
– 2 tbsp fresh lemon juice
– Ice cubes
– Apples, plums, grapes, and any other seasonal fruit – thinly sliced
– Ginger ale or ginger beer
– A few dashes of bitters
– Gooseberries to garnish or sub for rosemary
Instructions:
1. Place the Pimm’s, apple cider vinegar, and lemon juice in a cup, swirl to combine. Add ice, arrange the fruit around the ice and glass. Go for a major show stopping factor by layering the fruit by color
2. Top with ginger beer or ginger ale, add a few dashes of bitters, garnish and serve
