Brunch Recipe: Crispy Prosciutto Croque Madame

There’s nothing better than getting into a brunchy mood and feasting on some good ol’ eggs on toast. For this recipe I wanted to dig out a classic that never disappoints: a croque madame!

This French little classic number is a brunch-at-the-bistro staple that is super easy to make at home. For this recipe, I decided to leave behind the Bechamel sauce (which some people add to make it more decadent) and instead I made a little sweet-and-spicy mustard sauce. Cheese, crispy prosciutto, and a briny Hungarian pepper make it all come together.

Pro tip: Use a nice loaf of brioche or pullman — it makes all the difference!

Crispy Prosciutto & Spicy Mustard Croque Madame


Serves 2

You’ll need:

  • 3 tbsp grainy mustard
    1 tbsp hot mustard
    1 tsp honey
    1 tsp apple cider vinegar
    olive oil
    8-10 slices of prosciutto
    2 eggs (or more)
    1 loaf pullman or brioche
    1 hunky piece of gruyere cheese (or padano)
    Pickled Hungarian peppers, to serve

Instructions:

  • 1. First, combine the mustards, honey, and apple cider vinegar, season with salt and pepper.
    2. Fry the prosciutto on a pan with a little bit of olive oil. Fry a couple eggs too (sunny side up is best for show stopping runny yolks.)
    3. Slice the bread and spread some of the mustard mix on each side. Add the prosciutto and a few slices of cheese. Place extra cheese on top of the sandwich. Broil the sandwich in the oven for 3-5 minutes or until the cheese on the top is melty and golden brown. Remove from the oven, place the fried egg on top, add a little hungarian pepper as garnish and serve.
